Carrot cake

This is one of my DH's favorite ever....I use to make him to impress.....I think u can also give a try...


Ingredients -1

2 cups - all purpose flour
2 cups - sugar
4 Nos - eggs
1 1/2 cups - vegetable oil
2 tsp - vanilla extract
2 tsp - baking soda
2 tsp - baking powder
1/2 - teaspoon salt
2 tsp - ground cinnamon
3 cups - grated carrots

Instructions:

Step 1. Preheat oven to 350 degrees F (175 degrees C).
Step 2. Grease and flour a 9x13 inch pan.
Step 3. In a large bowl, mix flour, sugar, baking soda, baking powder, salt and cinnamon. See to that the cinnamon spread equally.
Step 4. Then add Vanilla,egg and mix them for few minutes, then add carrots followed by vegetable oil . Make sure Carrots and oil are equally distributed everywhere..
Step 5. Pour into prepared pan.
Step 6. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Notes:

If u want to add nuts u can put pecans or walnut

Banana walnut cake

Banana walnut cake is so easy to make and taste really good... just give it a try...

Ingredients
2 cup - Cake flour or all-purpose flour)
2 tsp - Baking powder
½ cup-Melted butter
½ tsp - Salt
3 nos - Banana smashed
1½ cup - Sugar
2 nos - egg(large)
1 tsp - Vanilla essence
½ cup - Chopped walnut
½ cup - Hot milk stirred with 1tsp coffee powder
Instructions
step1. Preheat oven to 350° C degrees.
step2. Sift flour,salt and baking powder together into a bowl. Keep aside.
step3. In a separate bowl, cream butter and sugar until light and fluffy.
step4. Slowly add the eggs and beat well and alternately add the flour mixture and milk , beating well after each addition.
step5. Finally add the vanilla essence and the mashed banana.
step6. finally pour batter in the non stick bread loaf pan and sprinkle the chopped walnuts and bake it for 55-60 mintues...let it cool down completely then cut it into slices
Notes
u can also make muffins with this batter.to get perfect banana walnut cake first pour 1/4 batter in the pan and sprinkl some walnuts and then pour rest of the batter and sprinkle rest of the walnut on top of it...
