Caulilfower rice

A nice kind of variety rice shared  by saras....


Ingredients -1

1 Cup - Long Grain Rice/Basmathi rice/jasmine rice

Ingredients - 2

 1 No - Cauliflower(cut into florest)
1 No - Onion(Cut into lengthwise)
2 Nos - Tomato chopped in to pieces
2 Nos - Green chilies
1 Tsp - Mustard seed
1 Tsp - Urad dhal
1 Tsp - Fennel seed
1/2 Tsp - Red chili powder(Increase or decrease as per the taste)
salt to taste
Oil for cooking

Instructions



Step1 . First cook the cauliflower florest for 10 minutes with little bit of salt ...
Step2. In a wide pan add oil and when it turns heat ...add mustard seed when it splutters add  urad dhal and fennel seed...
Step3. Then add chopped onion and cook until they are soft and tender and add 2 pods of garlic...
Step4. Now add chopped tomatoes..let it cook for about 5 mins..
Step5. Now add the cooked cauliflower florests... with little bit of water..smash the florest along with the onion and tomato...
Step6. Now add 1/2 tsp of chili powder and salt as per the taste..
Step 7.cauliflower gravy is ready.
Step8. Now mix the gravy with uncooked rice...
Step9. For 1 cup of jasmine rice/long grain rice/basmathi add 11/2 cup of water.
Step10. Check for salt and spice and cook the rice.....
Step11.Delcious cauliflower rice is ready

Veggieball Manchurian

I had some frozen veggie ball in my freezer for long time..so bored of eating it keeping it in oven....suddenly a bulb flashed ....why can't we try manchurian out of it....i tried and it taste awesome...



Ingredients

6 Nos - Veggie Balls
1/2 No - Onion(Cut it in to big pieces)
1/2 No - Capsicum(Green bell pepper cut in to big cubes)
1/2 tsp - Gingergarlic paste
1/2 tsp - Dark soya sauce
1/4 tsp - Vinegar
1/2 tsp - Ketcup
1/4 tsp - chilli flakes
salt to taste
cliantro to garnish

Method

Step1. Cook the veggie ball as per the instruction.(May be keep in the microwave for 1 minute.) and keep aside
Step2. In a wide pan heat oil and add gingergarlic paste and cook for 1 minute
Step3. Then slowly add the onion and bell pepper and fry for 4 mins...
Step5. Then add soyasauce,ketup and vinegar and little bit of salt..and chili flakes.
Step6. After 1 min of mixing it well add the veggie ball.
Step7. Add 2-3 tsp of oil...to avoid stickiness...
Step8. Check for the salt and spice if need add more..
Step9. Yummy yummy manchurian is ready.
Step10. Before ready to serve garnish it with cliantro and serve with smile...

Bisebelabath

Bisebelabath is one of my favorite.I love the way my mom cook. Iam sharing with u , with my personal touch.

Ingredients
Table -1
3/4 cup - rice
1/4 cup - toor dhal
pinch- tumeric
1/2 -tsp -salt
Table -2
4-5nos- redchilies
1 tbs -corrinaderseeds
10 nos - pepper
1 tsp - cumin seed
Table -3
3 tsp - ghee
2 cup - mixed vegetables(carrot,beans,peas,manga,drumstick....)
3 nos - cloves
1 no - bayleaves
2 nos - cardomon pods
1 no - onion(cut length-wise)
15 nos -cashews
1/4tsp -cinnamon
1 limesize -tamarind (soak in water)
salt to taste
chili flakes(optional)
cliantro for garnishing
Instructions
Step1. Pressure cooker the ingredients from table-1(rice,dhal,salt and tumeric) with 3 cup of water for about 4-5 whistles.Keep aside.

Step2. In a pan fry the ingredients from table-2(chili,corrianderseed,pepper and cumin)
Step3. Once it pop out and turns slightly brown, make it cool down completely.
Step4. Grind this ingredients and keep aside.
Step5. Heat in a big wok 2 tsp of ghee when it turns heat add bayleaves,cloves,cinnamon and cashew
Step6. Fry for few minutes then add onion fry until golden brown.
Step7. Then add 1/2 cup of water and add the grinded ingredients from table-2.
Step8. Let it cook for 2-3 mins then add the tamarind puree and cook for another couple of mintues.
Step9. Now add the vegetables with 1 cup of water(or more) . Let the vegetable cook well.
Step10. Check for the salt, after the vegetables are well cooked add the cooked food from table-1.
Step11. Make the stove simmer and cook for 5-10 mins until it get well mix with all the flavors.
Step12. Finally add 1 tsp of ghee and garnish with cliantro.
Step13. Serve warm.

Crispy Okra

This is one simple crispy microwave okra.


Ingredients
10 Nos- Okra
1/2 tsp -salt
1/4 tsp -tumeric poder
1/4 tsp-asafoteida
1/2 tsp -chili powder
1 tsp - corriander powder
1 tsp - oil
1 pinch garam masala

Instructions

Step 1. Cut okra in length wise as shown below



Step2. In a bowl mix all the ingredients along with okra.
Step3. Make sure the masala spread evenly in all the okras
Step4. In a microvable safe plate place the marinated okra.(do not overcrowd okra)
Step5. Microwave for 3+2+1+1/2 minutes.
Step6. Cool down for 5 mintues. Crispy okra is ready.

Uruandai Kulambu(with very less oil)

Actually it is my mil's recipe i just tried yesterday, it came out very well i want to share u with my friends, enjoy !!!!!!!!!!

Ingredients-1

½ cup -Channa dhal(kadalai paruppu)
½ no -Onion ( chopped)
1 no -G.chilli
1 slice-Ginger (finely chopped)
2 strands-Curry leaves (chopped)
1 tsp -Fennel seed
Salt(very little)

Ingredients-2

1 no-Onion medium ( chopped)
1 no -Tomato (chopped)
2 nos-Green chili
1 -Tamarind (lime size)
3 nos-Garlic
3 strands-Curry leaves
3 tsp-Oil
1 tsp -Fennel seed
½ tsp -Chiili powder
1 tsp -Corriander powder
Salt (as per taste)

Instructions
Step1. Soak channa dhal for about 1 hour.
step2. grind soaked dhal in to very thick paste(it will really hard to grind but add very little water)
step3. Add salt, onion, greenchilli, ginger, salt and fennel seed
step4. Mix it well and keep it aside.

step5. In a wok add very little oil and fry onion, tomato,garlic and chilli
step6. when it all changes it color keep itaside and let it cool down for 5 mins.
step6. in a mixer grind all the above ingredient and make it in a fine paste.
step7. Now heat kadai, with 3 tsp of oil and when it turn hot add fennel seed and curry leaves when it splutters add the grinded paste along with the tamarind juice,chiili powder and corriander powder.
stpe8. It can be kind of liquid, meanwhile prepare urundai for this delicious kulambu.
step9. with the grinded channal dhal(step2to 4)make some urundai's


step10. Make sure the kulambu is boiling, then now add this urundai
step11. let it cook for 10 mintues.
step12. switch off the stove and garnish it with cliantro.

Notes

it will go fine with rice, dosa, idly and even pongal.
make sure that kulambu is boiling otherwise urundai with get dissolved.
i usually use to mix grinded paste(that is tomato,onion,chilli,garlic) with tamarind juice. it taste really good.

Cauliflower '65

It is a very starter i think for any rich food.......


Ingredients


1No - Cauliflower(cut the florests)
1 Teaspoon - ginger paste
1 Teaspoon - garlic paste
2 tsp - Lemon juice
1. n0 - Egg
Salt to taste

Ingredients-2(for batter)
2 Teaspoon - Besan flour
4 Tablespoon - Maida
2 Tablespoon - corn flour
11/2 Teaspoon - Chilli Powder
pinch of asofetida
pinch of orange food color(kesari powder)

Method :
1. In a bowl add besan flour, maida,cornflower,chillipowder,asofetida,foodcolor, ginger garlic paste, salt, lemon juice and egg.
2. use hand or spoon to mix it well.
3. add little bit of water(not so watery- should be of thick paste)

4. add the wash florest( make sure the florest and wet if it has water then batter will be so liquid-it is better to pat the wash florests in kitchen towels)

5.Marinate the batter for 1/2 hr-1 hr. atleast for 15 mins, if u are in hurry.

6. in a pan or wok add oil and when it becomes hot fry it

7. Tasty '65 is ready..





notes:


don't overcrowd the cauliflower 10- 12 florests will give crispy end result.
can substitute caulilfower instead of chicken or shrimp.

Stuffed Mushrooms

It is often used to found in chinese resturant. it is my favorite i wish i want to always try this in a healthy way. so i tried it today and it came out well. hope u try and let me know.


Ingredients
10 nos -Mushroom(button mushroom)
2 no -Baby carrot(grated)
¼ no -Onion(chopped finely)
1 no -Garlic (chopped)
1 dash -Lemon juice
3 pinch -Salt
1 pinch -Chilli powder
2 T -Bread crumbs
2 T -Roasted peanuts (crushed)
1 stks -Cliantro( chopped)

Instructions

step 1. Clean the mushroom and remove the stem
step2. wipe the mushroom gently with the paper towels
step3. apply little bit of oil inside the mushroom and outside(just a little bit)
step4. keep it aside
step5. meanwhile we can prepare the stuffs.
step6. chop onion and garlic very finely.then chop the stem of the mushroom, add breadcrumbs, salt, chiilipowder,lemon juice,grated carrots and crushed peanut(roast the peanut before crushing-crush in the mixer)

step6. mix it in to a dry filling if it is very dry add some oil to make it adpt.
step7. stuff inside the filling.
step8. bake it in 325(F) to 20 mintues.
step9. garnish it with cliantro.

Guacomole

Guacomole is made with avocados .

Ingredients

2 nos -Ripe avocados
½ no -Onion medium ( chopped)
½ no -Tomato (chopped)
4 stks -Cliantro( chopped)
1½ tsp -Lemon juice
1 tsp -Pepper powder
Salt to taste
pinch -Red chilli powder

Instructions:

Step1. Take Two ripe avocados.





step2.cut into two(not in to exact half 1/4 on oneside and 3/4 on the otherside) so that easy to peel the seed.



step3. peel the skin of the avocado




step4.smash the avocado with spoon or with fork


step5. add chopped onion,cliantro,pepper, salt,lemon juice and pinch of red chilli powder.step6. add chopped tomatoes if u are using it immediately

Moore Kulambhu

It is simple and yummm......


Ingredients-1

1 Tablespoon -Rice
1 Tablespoon- Toordhal

Ingredients -2

2tsp- cuminseed
½ cup-Coconut (grated)
1 tsp -salt(as per taste)
2 cup -yogurt
1 cup -Water
2 nos -Green chili

Ingredients-3

1 tsp -Urad dhal
1 tsp -Mustard seeds
4 stks -Curry leaves
2 tsp -Oil

Instructions




Step1: Soak toor dhal and rice for around 20-30 mins.
Step 2.In a bowl add curd and water beat well so that there should be any pulpstep
3. add salt and turmeric powder mix well.step
4. in a mixer grind coconut, cuminseed,g.chilli,rice and thoor dhal for around 2-3min. (can add some water for grinding)
step5.then add the paste to the curd and mix it well. check for the taste
step6. In a pan add oil when it hot add mustard seed, urad dhal and curry leaves when it is done add it to the curd.
step 7.keep the prepared curd in the microoven for 5 min. check it should not boil only light foam should form.or else u can keep it in stove
step 8. fry vadai and let it cool down for 2-3min then add it to the kulmabhustep 9. Garnish it with corriander leaves.


Notes:u can use squash,okra or capsicum
