Potukadalai podi

It is very simple. just fivemintues to make this recipe without oil.



Ingredients
½ cup -Potukadalai (channa dhal)
3 no -R.chillies
1 T - cumin seed
4 no -Garlic
Salt (as per taste)
Instructions
Step1. Fry potukadalai and r.chillies in a pan.(no need to add oil and no need to fry cuminseed and garlic)
step2. Let it cool down for 2-3mins.
step3. add salt and pinch of asofetida and grind it in mixer for 3-4 mins.

Baked chicken(with no oil)

We non-vegetarians, mostly like chicken, but we usually use to add tomato, onion, masala's and deep or shallow fry chicken. This one is so cool, i want to try chicken without anymasal's as american's eat. i tried yesterday night for dinner, it came out so well, and it taste really yuumyyyyyyy..............Please try this one and let me know.



Ingredients

1 cup - Buttermilk
1 tsp -R.chilli powder(adjust as per taste)
2 tsp -Corriander powder(adjust as per taste)
2 tsp -Fennel seed powder/sombu powder
1 tsp -Lemon juice
1 tsp -Ginger garlic paste
1 lb - Chicken(thighs and leg or as u desire)
Salt as per taste
2 stks -Cliantro( chopped)

Instructions

Step1. First, the usuall way, Marginate, chicken with buttermilk, gingergarlic paste, chillipowder, salt, turmericpowder(no need to add corriander powder and sombhu powder) and do it for overnight.
stpe2. then when ready for cook, check for the taste, it should little bit sipcy, if not add some chilli powder, then coat the marginated chicken with corrainder powder and fennelseed powder.
step3. Preheat the oven to 350 degree .
step4. Ina baking sheet keep the marginated chicken and cook in the oven for another 45 mintues.( U can turn the chicken in to otherside inbetween)
step5. check if it is cooked or u can keep for another 10 mintues.
step6. Granish it with corriander leaves and sprinke with lemon juice.
Notes

u can use cooking spray, if want little bit oil.
if u fond of masala's u can add.

Chinese eggless noodles(ccc noodles)

This is long time running in my mind to try chinese noodles atlast the time came. I got some help from my good friend priya and used my cooking sense and tried this recipe, and it came out really well.


Ingredients 1

2 Pkt noodles

Ingredients 2

1 tsp - Ginger garlic paste

1/2 no - onion

1 no - capsicum(cut into small cubes)

2 cup cabbage(shredded)

1/2 cup carrot(cut in to length wise)

1 tsp - soy sauce

1/2 tsp - hot sauce

1/2 tsp - crushed peppers

1/2 tsp - salt

1 tsp - oil

Instructions

Step1. Cook the noodles and drain the water and keep aside.

Step 2. In a large wide pan pour 1 tsp oil add ginger garlic paste and fry onion until it turns golden brown.

Step 3. then add vegetables(carror,cabbage,capsicum) and cook for 2-3 mins.

step 4. then add hotsauce,soy sauce,crushed peppers and salt and cook with the vegetables for another 3-4 mins.

step 5. when the vegetables are half cooked add the cooked noodles and stir untill the vegetables mix together with the noodles. it may take around another 3-5 mins.


step 6. delicious noodles is ready garnish it will spring onion or with cliantro.

Pancake

Pancake is one of my daughter's favorite . we use to go to ihop once in a month then i started preparing pancake in house itself. we can get ready made mix, but i tried home recipe yesterday and it taste exactly same. preparing at home knows what ingredient we use. try this and let me know.....


Ingredients

2 cup -Maida flour/ all purpose flour
1½ tsp - Baking powder
2 tsp -Butter
½ tsp -Salt (can decrease or increase depending on your taste)
1 cup -Milk
2 tsp -Sugar
2 no -Eggs
2 pinch -Cinnamon(optional)


Instructions

Step1. In a big bowl put all the ingredients the maida/allpurpose flour, butter, salt, sugar, baking powder, egg and milk
step2. wisk them well, it is better to use egg beater
step3. in a pan take the batter and do some dosas( make it should be thick )
step4. serve hot with pancake syrup. its taste yum.

Notes

u can use skim milk or 2% milk.
instead of pancake syrup u can use gradeB mapple syrup(available in health store)
makesure the batter is thick, if it is very thick add some milk.

Butter biscuit

What can beat a nice cup of hot tea with crunchy munchy butter biscuit. This cookies are much better then the one we buy in the tea stall, i bet..My mommy like this combo now am too......
enjoy the recipee with lot of love.....

Ingredients

1 cup sugar
1 cup butter
2 eggs
11/2 tsp vanilla essence
21/2 cup flour
1 tsp baking powder
1/2 tsp salt

Method
step1. Preheat the oven to 350 degree.
Step2. Cream butter and sugar.
Step3. Add egg, vanilla essence, flour, baking powder and salt.
Step4. The dough is kind of sticky, so refridgerate the dough overnight.
step5. Next day roll the dough with rolling pan(roll not so thin or thick) and cut with the cookie cutter or bottle lid...
Step6. Bake it for around 12-15 mins.
Step 7. Cool it down completely and then enjoy the cookies..

Peanut and jelly cookies

Peanut and jelly cookie is a perfect snack for ur pleasant evening snack. I just tried yesterday it is so simple and easy and came out really really good. I was so so impressed so do u, try this snack and let me know.



Ingredients

½ cup -Butter(softened)
¼ cup -Dark brown sugar
1 no -Egg(seperated)
1 cup -All purpose flour
1 cup -Unsalted peanut(finely chopped)
½ cup -Grape or strawberry jelly

Instructions

Step1. Preheat the oven to 300 degrees. Light grease a cookie sheet.
Step2. In a Medium bowl cream the butter and brown sugar until light and fluffy.
Step3. Add the egg yolk, then the flour and beat well until well blended.
step4.Lightly beat the egg white. Using a Rounded 1/2 teaspon measure of dough, form balls of dough.
Step5. Dip each ball into eggwhite and then in to the chopped peanuts,
step6. Place the balls on the cookie sheet and using your fingertips, make a small depression in each one.
step7. Bake for 5 mintues, then remove the cookie sheet fro the oven and press center again.
Step8. Return cookies to oven and bake for an additional 20 minutes.
Step9. Cool completely and fill centers with strawberry of grape jelly.

Cauliflower '65

It is a very starter i think for any rich food.......


Ingredients


1No - Cauliflower(cut the florests)
1 Teaspoon - ginger paste
1 Teaspoon - garlic paste
2 tsp - Lemon juice
1. n0 - Egg
Salt to taste

Ingredients-2(for batter)
2 Teaspoon - Besan flour
4 Tablespoon - Maida
2 Tablespoon - corn flour
11/2 Teaspoon - Chilli Powder
pinch of asofetida
pinch of orange food color(kesari powder)

Method :
1. In a bowl add besan flour, maida,cornflower,chillipowder,asofetida,foodcolor, ginger garlic paste, salt, lemon juice and egg.
2. use hand or spoon to mix it well.
3. add little bit of water(not so watery- should be of thick paste)

4. add the wash florest( make sure the florest and wet if it has water then batter will be so liquid-it is better to pat the wash florests in kitchen towels)

5.Marinate the batter for 1/2 hr-1 hr. atleast for 15 mins, if u are in hurry.

6. in a pan or wok add oil and when it becomes hot fry it

7. Tasty '65 is ready..





notes:


don't overcrowd the cauliflower 10- 12 florests will give crispy end result.
can substitute caulilfower instead of chicken or shrimp.

Shrimp cocktail

shrimp is actually has less calories and no cholestrol and good for health.

Ingredients-1

20 nos -Cooked shrimp(with tail)
Salt as per need
Pepper to taste
Lemon juice to sprinkle

Ingredients-2

½ no -Onion(optional)
2 no Garlic(optional)

Instructions

step1. although the shrimp is cooked it might have some raw smell. so cook it for 5 mintues in a pan by just adding water.
step 2. spread the shrimp in kitchen towel to absorb all the water.

step3. there should be no moisture in the shrimp so press it with napkins and drain all the water.

step4. in the pan spread the shrimp then sprinkle oil little by little.
step5.turn both side often(because we are using less oil so that it will get burn)
step6. sprinkle very little salt because it is cooked shrimp so it already has salt and sprinkle pepper.
step7.when it started poping the shrimp is ready so immediately transfer it in to the plate
step8.before serving sprinkle with lemon juice.
hot and tasty shrimp cocktail is ready.

these steps are optional.
1.u can finely chop onion and garlic and fry until there are very brown and crispy and add to the shrimp it gives a very good texture and aroma

this shrimp can serve as a appetizer or go fine with salad

Cooking tips

Low Fat Cooking: * Get into the habit of measuring the oil you use while you cook, rather than just pouring it out of the bottle. It will be much easier to moderate the amount you use.
* Use non-stick cookware so that you don't have to use as much, if any, fat. When sauteing, use a small amount of chicken broth or wine instead of butter or oil.
* To make fat-free broth, chill your meat or chicken broth. The fat will rise to the top, and you can remove it before using the broth.
* Many vegetables and fruits, including potatoes and apples, retain many of their nutrients in their skin. So when possible, leave the skin on your fruits and vegetables and cook them whole.
* Romaine lettuce is loaded with vitamins compared to iceberg. It has three times as much Vitamin C and six times as much Vitamin A.
* Vitamin C is destroyed quickly in cooking - so cook your vegetables with Vitamin C in the smallest amount of water possible and for a short amount of time.
* Stock up on spices. One of the keys to cooking low-fat and not getting bored is to spice your food well. When you have finished your recipe, always taste it and adjust the spices to meet your taste.
* Purchase the best (i.e. heaviest) set of non-stick cookware you can afford.
* When cooking a dish with both vegetables and meat (i.e. in stir frys and stews), reduce the amount of meat by 1/3 and increase the amount of vegetables by 1/3. You will hardly notice!
* Thicken gravies with milk or broth blended in the blender with flour. Be sure to cook long enough to remove the raw flour taste. You'll never notice the lack of fat.
* Use olive oil for cooking when appropriate. It adds to the taste of the dish and is better for you.

Stuffed Mushrooms

It is often used to found in chinese resturant. it is my favorite i wish i want to always try this in a healthy way. so i tried it today and it came out well. hope u try and let me know.


Ingredients
10 nos -Mushroom(button mushroom)
2 no -Baby carrot(grated)
¼ no -Onion(chopped finely)
1 no -Garlic (chopped)
1 dash -Lemon juice
3 pinch -Salt
1 pinch -Chilli powder
2 T -Bread crumbs
2 T -Roasted peanuts (crushed)
1 stks -Cliantro( chopped)

Instructions

step 1. Clean the mushroom and remove the stem
step2. wipe the mushroom gently with the paper towels
step3. apply little bit of oil inside the mushroom and outside(just a little bit)
step4. keep it aside
step5. meanwhile we can prepare the stuffs.
step6. chop onion and garlic very finely.then chop the stem of the mushroom, add breadcrumbs, salt, chiilipowder,lemon juice,grated carrots and crushed peanut(roast the peanut before crushing-crush in the mixer)

step6. mix it in to a dry filling if it is very dry add some oil to make it adpt.
step7. stuff inside the filling.
step8. bake it in 325(F) to 20 mintues.
step9. garnish it with cliantro.

deviled egg

It is very simple and a good appetizer.

Ingredients

Salt(as per taste)
Pepper(as per taste)
5 drop -Vinegar
¼ tsp -Yellow mustard
2 T -Mayonnaise
3 nos-Hard boiled eggs

Instructions

step1. Boil eggs and seperate white and eggyolks.

step2. Smash the eggyolk and add mayyonise,pepper,salt,vinegar and mustard mix it well
step3. In a ziploc cover add this mix, put a whole and gently squeeze it in the egg white
step4. Garnish it with green onions, cliantro, cooked shrimp or if u want spicy add some cayyene pepper.

Notes

it is kind of sour , so adjust the ingredients. its taste really good.
u can substitute mayyonise with salad dressing

chicken pasta

Pasta is an Italian food made from a dough using flour, water and/or eggs.There are approximately 350 different shapes of pasta. A few examples include spaghetti (solid cylinders), macaroni (tubes or hollow cylinders), fusilli (swirls), lasagna (sheets), and gnocchi (balls), although this is considered a separate dish by some. The two basic styles of pasta are dried and fresh. There are also variations in the ingredients used in pasta. The time for which pasta can be stored varies from days to years depending upon whether the pasta is made with egg or not, and whether it is dried or fresh Pasta is boiled prior to consumption.


Ingredients-1
½ pack - Pasta(penne or rotini)
1 pinch - Salt
Water (as per need)
Ingredients-2

½ -Stick butter
½ cup- Parmesan cheese
¾ cup -Milk
1 T -Maida flour/ all purpose flour
Pepper to taste
Salt as per taste

Ingredients-3

½ no - Onion (big size) sliced
½ no -Capsicum(cubed)
5 no -Mushroom sliced
½ cup-Chicken (boneless)
1 T -Oil
Salt as per need
Pepper as per taste

Instructions

How to cook pasta
step1. In a big microwavable bowl put the required amoun to pasta, add salt and enough water and cook in a high temp. for 10 mintues.
step2. take fork or spoon and stir the pasta for two or three times( because pasta will stick together)
step3.once again cook for another 10 mintues or until pasta is well cooked.


How to Make sauce

step1. In awok or pan heat milk, when it comes to boil, add cheese, butter and when it melts, add maida and keep stiring it.
step2. after 2-3 mintues add salt and pepper and switch off .

How to cook chicken and veggie

step1. In a wide pan add 1T oil and when it turns heat add onion and fry for 2 mintues then add chicken.
step2. cut chicken in to small cubes.
step3. cook chicken with salt and pepper until its well done then add capsicum and mushroom.
step4. cook for 4-5 mintues
step5. add tomato at this stage.step6. cook for one min and switch off.

Final Mixing stage

Step1.The main thing is to drain pasta without any water, drain pasta and add the sauce and cooked chicken and veggie.
step2. garnish it will corriander leaves.

Banana walnut cake

Banana walnut cake is so easy to make and taste really good... just give it a try...

Ingredients
2 cup - Cake flour or all-purpose flour)
2 tsp - Baking powder
½ cup-Melted butter
½ tsp - Salt
3 nos - Banana smashed
1½ cup - Sugar
2 nos - egg(large)
1 tsp - Vanilla essence
½ cup - Chopped walnut
½ cup - Hot milk stirred with 1tsp coffee powder
Instructions
step1. Preheat oven to 350° C degrees.
step2. Sift flour,salt and baking powder together into a bowl. Keep aside.
step3. In a separate bowl, cream butter and sugar until light and fluffy.
step4. Slowly add the eggs and beat well and alternately add the flour mixture and milk , beating well after each addition.
step5. Finally add the vanilla essence and the mashed banana.
step6. finally pour batter in the non stick bread loaf pan and sprinkle the chopped walnuts and bake it for 55-60 mintues...let it cool down completely then cut it into slices

u can also make muffins with this batter.to get perfect banana walnut cake first pour 1/4 batter in the pan and sprinkl some walnuts and then pour rest of the batter and sprinkle rest of the walnut on top of it...

Padthai

Padthai is authentic thai food and it taste look yum..


Ingredients-1

1 pack-Thai rice noodles or padthai noodles
15 nos-Shrimp(small)
2 tsp -Sugar
1 tsp -Garlic paste
1 tsp -Fish sauce
1 tsp -Tomato ketchup
1 no -Egg

Ingredients-2

3 tsp- Roasted peanuts
2 stks - Green onions(chopped)
4 drop -Lemon juice(can decrease r increase as per taste)
1 cup - Bean sprouts (finely chopped)
4 stks - Cliantro( chopped)

Instructions

Step1. In a bowl boil some water for around 4-5mintues or microwave water for 3 minutes.
step2. put the noodles in the warm water for around 15 mintues and keep aside.
step3. Now the noodles are very much cooked in the water itself(magic)
step4. In a wok or kadai add some oil and fry garlic paste until it turns brown


step5. Then add shrimp with little bit of water so that the shrimp cook well
step6. Meanwhile beat the egg .
step7. when the shrimp is done add egg and cook for few mintues.
step8. then add sugar, ketchp,fish sauce and littlebit of salt and cook for few mintues.
step9.Then add the noodles (drain the noodles)and cook for few mintues until the noodles turn in to orange color
step10. Add beansprout and cook for 2-3 minutes
step11. Then transfer into bowl and garnish it with corriander leaves, green onions, roasted peanut and sprinkle with little bit of lemon juice.
step12. Finally for the finishing touch add some bean sprout.NotesWe can also try with chicken.

Chalupa

Chalupa is a famous mexican dish. It is very simple and easy to make. Let give a try

Ingredients

½ cup - Corn flour
2 tsp - Maida flour
2 Tablespoon - Chicken (cooked and shredded)
2 Tablespoon -Guacomole
2 Tablespoon -Cliantro( chopped)
2 Tablespoon -Sherred cheese
Salt (as per taste)
Oil (for deep frying)


Instructions

Step 1: Make a dough with cornflour. Cornflour is not sticky to mix so add maida .
step 2. Add few drops of oil and and mix the dough.
step 3. Add salt and little bit of water to make dough like as we do for poori
step 4. step aside for 15 mintues
step 5. in a ziploc cover apply some oil and take some dough and press it gently on one sidethen press it on the otherside.if the dough break into pieces apply some maida flour.
step 6. meanwhile a kadai, add oil to fry.
step 7. fry it as we do for poori.while frying bend one end of the corner to retain taco's shape.
step 8. after then drain the oil. step 9. Put gucomole,then chicken,chesse.cliantro,again guacomole chesse.finemexican chauluppa is ready.

Guacomole

Guacomole is made with avocados .

½ no -Onion medium ( chopped)
½ no -Tomato (chopped)
4 stks -Cliantro( chopped)

Step1. Take Two ripe avocados.





step2.cut into two(not in to exact half 1/4 on oneside and 3/4 on the otherside) so that easy to peel the seed.



step3. peel the skin of the avocado




step4.smash the avocado with spoon or with fork


step5. add chopped onion,cliantro,pepper, salt,lemon juice and pinch of red chilli powder.step6. add chopped tomatoes if u are using it immediately

Moore Kulambhu

It is simple and yummm......


Ingredients-1

1 Tablespoon -Rice
1 Tablespoon- Toordhal

Ingredients -2

2tsp- cuminseed
½ cup-Coconut (grated)
1 tsp -salt(as per taste)
2 cup -yogurt
1 cup -Water
2 nos -Green chili

Ingredients-3

1 tsp -Urad dhal
1 tsp -Mustard seeds
4 stks -Curry leaves
2 tsp -Oil

Instructions




Step1: Soak toor dhal and rice for around 20-30 mins.
Step 2.In a bowl add curd and water beat well so that there should be any pulpstep
3. add salt and turmeric powder mix well.step
4. in a mixer grind coconut, cuminseed,g.chilli,rice and thoor dhal for around 2-3min. (can add some water for grinding)
step5.then add the paste to the curd and mix it well. check for the taste
step6. In a pan add oil when it hot add mustard seed, urad dhal and curry leaves when it is done add it to the curd.
step 7.keep the prepared curd in the microoven for 5 min. check it should not boil only light foam should form.or else u can keep it in stove
step 8. fry vadai and let it cool down for 2-3min then add it to the kulmabhustep 9. Garnish it with corriander leaves.


Notes:u can use squash,okra or capsicum

Strawberry banana smoothie

Delicious strawberry smoothie. Now it is strawberry season. You can try this smoothie. Kids will Love this.


Ingredients

1 cup Strawberry pieces
1 no Banana
3 tsp Cocoa powder
1 cup Milk 4 tsp Sugar (can increase or decrease depending on your taste).
4 cnt Ice cubes
4 drop Vanilla essence


Instructions:


Clean the strawberries . In the mixer run strawberry,banana, cocoa powder for abt 2 mins. After then add sugar run for 1 mintue. Check for the thickness and sweet . If it is wattery add few berries if not add icecubes. Delicious smoothie is ready...
