Kheer-(Rice Pudding)

A rich North-Indian way of payasam..



Ingredients
1/4 cup - Long grain rice, washed and drained(basmathi rice)
1 1/2 - Water
1 Cup -Milk
2 Tsp - Sugar
1 Pinch -Salt
2 Nos - Cardomon pods
2 Tsp - Blanched silvered almonds
1 Tsp - Skinned Pistachio nuts chopped.
Instructions
Step 1. Soak the rice in water for about 15 minutes.
Step 2. Put the rice,water and cardamon in to a pan.. when it is half cooked add the milk and cook until the rice is soft and the grains are starting to break up.
Step3. Add the almonds, pistachio and simmer for 3-4 minutes.
Step4. Add the sugar and stir until the sugar completly dissolves .
Step 5. Remove from heat . Serve hot or cold.
Note:
If u want rich texture u can add milk instead of water.
U can add 1/4 tsp of ghee if u are big fan of ghee's aroma.
Raisins can also be added to give more richness.
