Crispy Okra

This is one simple crispy microwave okra.


Ingredients
10 Nos- Okra
1/2 tsp -salt
1/4 tsp -tumeric poder
1/4 tsp-asafoteida
1/2 tsp -chili powder
1 tsp - corriander powder
1 tsp - oil
1 pinch garam masala

Instructions

Step 1. Cut okra in length wise as shown below



Step2. In a bowl mix all the ingredients along with okra.
Step3. Make sure the masala spread evenly in all the okras
Step4. In a microvable safe plate place the marinated okra.(do not overcrowd okra)
Step5. Microwave for 3+2+1+1/2 minutes.
Step6. Cool down for 5 mintues. Crispy okra is ready.

Carrot cake

This is one of my DH's favorite ever....I use to make him to impress.....I think u can also give a try...


Ingredients -1

2 cups - all purpose flour
2 cups - sugar
4 Nos - eggs
1 1/2 cups - vegetable oil
2 tsp - vanilla extract
2 tsp - baking soda
2 tsp - baking powder
1/2 - teaspoon salt
2 tsp - ground cinnamon
3 cups - grated carrots

Instructions:

Step 1. Preheat oven to 350 degrees F (175 degrees C).
Step 2. Grease and flour a 9x13 inch pan.
Step 3. In a large bowl, mix flour, sugar, baking soda, baking powder, salt and cinnamon. See to that the cinnamon spread equally.
Step 4. Then add Vanilla,egg and mix them for few minutes, then add carrots followed by vegetable oil . Make sure Carrots and oil are equally distributed everywhere..
Step 5. Pour into prepared pan.
Step 6. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Notes:

If u want to add nuts u can put pecans or walnut

Hot Cross Bun

Ingredients-1

1 cup -Milk
¼ cup -Margarine or butter
¼ cup -Granulated sugar
2 pack -Active dry yeast
2¼ cup -All purpose flour
¼ cup -Raisins
1 tsp -Grated orange peel

Ingredients-2

1 tsp -Milk
2 tsp -Margarine or butter

Ingredients-3

2 tsp -Confectioner's sugar
1 tsp -Water (approx)
3 pint -Grated lemon peel

Instructions

Step1. In a Small Saucepan Combine 1 cup milk and 1/2 cup butter/margarine and heat over low heat until slightly warmed, not so hot.
step2. In work Bowl of food processor of in a medium mixing bowl combine sugar and yeast, add flour and gradually pour in warm milk mixture. Process or beat slightly with electric mixure or u can wisk with egg beater, until thoroughtly combined.
step3. Dough will be sticky. stir in raisin and in orange peel.
step4. Shape dough in to 12 equal ball, about 2 ounce each,
step5, arrange in a baking sheet,leaving 2 inch space inbetween.


step6. And allow to rise until buns are doubled in volume for 1 hour.


step7. Ina a small container, melt 2tsp butter/margarine, add 1tsp milk and stir to combine.(from table-2)
step8. Brush Mixture evenly oven each buns, then using a sharp knife, cut a cross inthe top of each .
step9. Preheat the oven to 350degree and bake it for about 15-20 mintues.
step10. Let the Bun cool down completely.
step11. In a small bowl, combine confectioner's sugar, water and if desired lemin peel, drizzle icing evely over each bun in the shape of a cross.


step12. Delicious hotcross bun is ready.

Notes

Milk can be either whole mix or skim milk or 2%.

Uruandai Kulambu(with very less oil)

Actually it is my mil's recipe i just tried yesterday, it came out very well i want to share u with my friends, enjoy !!!!!!!!!!

Ingredients-1

½ cup -Channa dhal(kadalai paruppu)
½ no -Onion ( chopped)
1 no -G.chilli
1 slice-Ginger (finely chopped)
2 strands-Curry leaves (chopped)
1 tsp -Fennel seed
Salt(very little)

Ingredients-2

1 no-Onion medium ( chopped)
1 no -Tomato (chopped)
2 nos-Green chili
1 -Tamarind (lime size)
3 nos-Garlic
3 strands-Curry leaves
3 tsp-Oil
1 tsp -Fennel seed
½ tsp -Chiili powder
1 tsp -Corriander powder
Salt (as per taste)

Instructions
Step1. Soak channa dhal for about 1 hour.
step2. grind soaked dhal in to very thick paste(it will really hard to grind but add very little water)
step3. Add salt, onion, greenchilli, ginger, salt and fennel seed
step4. Mix it well and keep it aside.

step5. In a wok add very little oil and fry onion, tomato,garlic and chilli
step6. when it all changes it color keep itaside and let it cool down for 5 mins.
step6. in a mixer grind all the above ingredient and make it in a fine paste.
step7. Now heat kadai, with 3 tsp of oil and when it turn hot add fennel seed and curry leaves when it splutters add the grinded paste along with the tamarind juice,chiili powder and corriander powder.
stpe8. It can be kind of liquid, meanwhile prepare urundai for this delicious kulambu.
step9. with the grinded channal dhal(step2to 4)make some urundai's


step10. Make sure the kulambu is boiling, then now add this urundai
step11. let it cook for 10 mintues.
step12. switch off the stove and garnish it with cliantro.

Notes

it will go fine with rice, dosa, idly and even pongal.
make sure that kulambu is boiling otherwise urundai with get dissolved.
i usually use to mix grinded paste(that is tomato,onion,chilli,garlic) with tamarind juice. it taste really good.

Zuchini Fried rice

Zuchini is a negative calorie vegetable and taste delicious. It is often used in chinese and japenese resturants. This fried rice is combo of both american and asian.


Ingredients-1

3 cup -Cooked rice

Ingredients-2

1 no -Zucchini
1 no -onion(meduim size)
Pepper to taste
Salt to taste
4 stks -Cliantro( chopped)
2 tsp -Oil
½ tsp-Urad dhal
½ tsp - Mustard
2 tsp -Sesame oil

Instructions

Step 1 .In a pan(without adding oil) cook zuchini add little bit salt and pepper. fry for few mintues then add 1/2tsp oil.
Step 2. zuchini wil cook fast and it should not overcook. so make sure it turns slightly brown now u can add sesame seed (japense style) then take keep it aside.

Step 3. In a pan add oil and when it turns heat add mustard and urad dhal.
Step 4. fry onion and garlic until it turns brown
Step 5. add salt and pepper as per ur taste.
Step 6. in a wide pan put the cooked rice then layer with cliantro then zuchini and then fried onion after a mintue mix it well.
Step 7. before serving add 2tsp of sesame oil.
for the richness and texture of our food.

Potukadalai podi

It is very simple. just fivemintues to make this recipe without oil.



Ingredients
½ cup -Potukadalai (channa dhal)
3 no -R.chillies
1 T - cumin seed
4 no -Garlic
Salt (as per taste)
Instructions
Step1. Fry potukadalai and r.chillies in a pan.(no need to add oil and no need to fry cuminseed and garlic)
step2. Let it cool down for 2-3mins.
step3. add salt and pinch of asofetida and grind it in mixer for 3-4 mins.

Baked chicken(with no oil)

We non-vegetarians, mostly like chicken, but we usually use to add tomato, onion, masala's and deep or shallow fry chicken. This one is so cool, i want to try chicken without anymasal's as american's eat. i tried yesterday night for dinner, it came out so well, and it taste really yuumyyyyyyy..............Please try this one and let me know.



Ingredients

1 cup - Buttermilk
1 tsp -R.chilli powder(adjust as per taste)
2 tsp -Corriander powder(adjust as per taste)
2 tsp -Fennel seed powder/sombu powder
1 tsp -Lemon juice
1 tsp -Ginger garlic paste
1 lb - Chicken(thighs and leg or as u desire)
Salt as per taste
2 stks -Cliantro( chopped)

Instructions

Step1. First, the usuall way, Marginate, chicken with buttermilk, gingergarlic paste, chillipowder, salt, turmericpowder(no need to add corriander powder and sombhu powder) and do it for overnight.
stpe2. then when ready for cook, check for the taste, it should little bit sipcy, if not add some chilli powder, then coat the marginated chicken with corrainder powder and fennelseed powder.
step3. Preheat the oven to 350 degree .
step4. Ina baking sheet keep the marginated chicken and cook in the oven for another 45 mintues.( U can turn the chicken in to otherside inbetween)
step5. check if it is cooked or u can keep for another 10 mintues.
step6. Granish it with corriander leaves and sprinke with lemon juice.
Notes

u can use cooking spray, if want little bit oil.
if u fond of masala's u can add.

Chinese eggless noodles(ccc noodles)

This is long time running in my mind to try chinese noodles atlast the time came. I got some help from my good friend priya and used my cooking sense and tried this recipe, and it came out really well.


Ingredients 1

2 Pkt noodles

Ingredients 2

1 tsp - Ginger garlic paste

1/2 no - onion

1 no - capsicum(cut into small cubes)

2 cup cabbage(shredded)

1/2 cup carrot(cut in to length wise)

1 tsp - soy sauce

1/2 tsp - hot sauce

1/2 tsp - crushed peppers

1/2 tsp - salt

1 tsp - oil

Instructions

Step1. Cook the noodles and drain the water and keep aside.

Step 2. In a large wide pan pour 1 tsp oil add ginger garlic paste and fry onion until it turns golden brown.

Step 3. then add vegetables(carror,cabbage,capsicum) and cook for 2-3 mins.

step 4. then add hotsauce,soy sauce,crushed peppers and salt and cook with the vegetables for another 3-4 mins.

step 5. when the vegetables are half cooked add the cooked noodles and stir untill the vegetables mix together with the noodles. it may take around another 3-5 mins.


step 6. delicious noodles is ready garnish it will spring onion or with cliantro.

Pancake

Pancake is one of my daughter's favorite . we use to go to ihop once in a month then i started preparing pancake in house itself. we can get ready made mix, but i tried home recipe yesterday and it taste exactly same. preparing at home knows what ingredient we use. try this and let me know.....


Ingredients

2 cup -Maida flour/ all purpose flour
1½ tsp - Baking powder
2 tsp -Butter
½ tsp -Salt (can decrease or increase depending on your taste)
1 cup -Milk
2 tsp -Sugar
2 no -Eggs
2 pinch -Cinnamon(optional)


Instructions

Step1. In a big bowl put all the ingredients the maida/allpurpose flour, butter, salt, sugar, baking powder, egg and milk
step2. wisk them well, it is better to use egg beater
step3. in a pan take the batter and do some dosas( make it should be thick )
step4. serve hot with pancake syrup. its taste yum.

Notes

u can use skim milk or 2% milk.
instead of pancake syrup u can use gradeB mapple syrup(available in health store)
makesure the batter is thick, if it is very thick add some milk.

Butter biscuit

What can beat a nice cup of hot tea with crunchy munchy butter biscuit. This cookies are much better then the one we buy in the tea stall, i bet..My mommy like this combo now am too......
enjoy the recipee with lot of love.....

Ingredients

1 cup sugar
1 cup butter
2 eggs
11/2 tsp vanilla essence
21/2 cup flour
1 tsp baking powder
1/2 tsp salt

Method
step1. Preheat the oven to 350 degree.
Step2. Cream butter and sugar.
Step3. Add egg, vanilla essence, flour, baking powder and salt.
Step4. The dough is kind of sticky, so refridgerate the dough overnight.
step5. Next day roll the dough with rolling pan(roll not so thin or thick) and cut with the cookie cutter or bottle lid...
Step6. Bake it for around 12-15 mins.
Step 7. Cool it down completely and then enjoy the cookies..
